Food and Beverage Manager of Rhino Ridge Safari Lodge, Maggie Legong, gives us some behind-the-scenes information about the training and empowerment of local community members who are employed at the luxury Hluhluwe lodge:

“The Rhino Ridge Restaurant Team is slowly but surely becoming stronger by the day. They wrote their first food terminology test yesterday in the Conference Centre. Prior to that they had been spending their free time studying and asking questions – training each other. They took the test very seriously. I’m very proud of them for showing such enthusiasm and participation.”

“The food terminology test was out of 100 marks and they had an hour to complete it” says Maggie, pictured below right. “The aim of this test is to see how far each individual is in terms of the understanding of the food they are serving, the drinks they are serving and the technicalities of service. It also helps me as a tool, to see where I need to train more per individual.”
